The Process

A close-up view of a yellow apple being sliced with a serrated knife on a wooden cutting board.

Passionate about simplicity and authentic pasta, John DiStazio studied the art and skill of handmade pasta with professional sfoglina, Simonetta Capotondo, in Ancona, Italy.

John grew up with traditional pasta made at home. With Impasto, he's bringing a dream to life — sharing his love for homemade authentic Italian food with families in the Pittsburgh area.

Using only the freshest ingredients, John makes his pasta by hand with time-honored traditional methods, bringing classic pasta — as it's made in Italy — to your table.
